Quinoa, Bean, Asparagus & Pepper Salad


1/2 cup dry quinoa & 1 cup water

1 cup chopped red peppers

1 bunch asparagus

1 1/2 cup cut green beans or snap peas

1/3 cup fresh cilantro

1/3 cup fresh basil 

1/2 cup extra virgin olive oil
1/2 tsp. cumin powder
salt & pepper to taste

Bring quinoa and 1 cup of water to a boil. Put lid over top, reduce heat and simmer for 15 min or until quinoa is cooked, and flaky when mixed with a fork. Remove from heat.
Stir fry the veggies and herbs for 2 minutes on medium heat, leaving them crispy. Mix all ingredients gently.
*For those who like spicy, hot sauce or chili powder can be added, or even some curry powder.
